If you are looking for a maximum tempering capacity of up to 300 kg/h with easy operation and cleaning, then we would recommend the LCM Cascades TWIN Temper.
Both tanks can be used in cascade operation (if you require a large amount of the same type of chocolate) as well as separate as Twin Temper (for simultaneous processing of two different types of chocolate).
Automatically filling with liquid chocolate using the LCM melting container (LCM M models) or with a melting container from another manufacturer is possible.
Through the simple cleaning possibility, this Temper can be used flexibly and a change of mass is possible without any problems with almost no loss of chocolate.
The Temper is also suitable for the tempering of candy fillings or nougat masses..
With fully automatic, continuous circulation tempering the chocolate is re-tempered at each pass. Chocolate on the filling pipe that is not removed and flows back into the chocolate tank is decrystallized and tempered again. This means, that even after hours of use, chocolate tempered in this manner has excellent crystallization, viscosity and a tempting gloss. And this guarantees the best storability of the products. Overcrystallization of the coatings does not occur, as we are assured through constant laboratory tests at famous chocolate manufacturers.
The LCM tempering machines also offer a high level of flexibility, when it comes to changing chocolate varieties. Cleaning is very easy. The chocolate tanks together with internal piping system can be flushed (through) with hot water.
The special feature is the cascade design of the LCM CASCADES TWIN TEMPER which enables this Temper to be operated in two stages (Stage 1: Precrystallization, Stage 2: Tempering).
In tank 1 melted chocolate is filled and precrystallized and in tank 2 finish tempered. Through the system with two tanks up to 250 kg of tempered chocolate per hour can be obtained with constant tempering quality.
However, since both systems can also operate independently of each other, this machine can also be used for the processing of 2 different chocolate varieties. For this, the connecting pipe in the tank is closed and the function corresponds to that of a TWIN TEMPER with a tapping output of approx. 70kg/hour of tempered coating per side.
Through the very simple cleaning possibility, this Temper can be used very flexibly and a change of mass is possible without any problems with as good as no loss of chocolate.
The Temper is also suitable for the tempering of fillings or nougat masses.
